JOB FOCUS:

• Maintains complete knowledge of correct maintenance and use of equipment
• Monitors and maintains cleanliness, sanitation and organization of assigned work areas
• Adheres to all Health Department, sanitation and safety regulations
• Maintains cleanliness and organization of supply/storage closets; removes trash, wipes down shelves/counters; cleans floors; removes items which do not belong and place in correct areas
• Inspects the cleanliness and condition of all washed equipment and areas; re-cleans items not meeting standards
• Performs duties as a Kitchen Worker and Stove Cleaner as needed
• Uses correct cleaning chemicals for designated items, according to OSHA regulations and hotel requirements
• Checks the working condition of equipment and machinery in accordance with specifications
• Cleans designated equipment
• Stores cleaned equipment in designated areas
• Handles all glasswares carefully to prevent breakage and loss
• Maintains cleanliness and working condition of garbage disposal and grease traps
• Maintains cleanliness and organization of work areas throughout shift
• Stocks kitchen lines, restaurant service areas and buffet line with designated cleaned wares, utensils and equipment
• Cleans all stoves in assigned area, including tops of stoves and ovens
• Cleans all grills, flat tops, hood units and all gas pipes connected to stoves and under all units
• Cleans and dries all refrigeration units in stove area
• Cleans spills in the kitchen and work areas immediately
• Uses designated chemicals, supplies and equipment to clean various floor surfaces (brooms, mops, stripper, buffer, etc.)
• Transports mats to the loading dock and ensures they are clean
• Transports garbage containers from the kitchen and work areas to dumpster
• Cleans garbage compactor and area as assigned
• Reports any damages, maintenance problems or safety hazards to the supervisor

• Has at least 1 year of experience working in a kitchen
• Must be at least 18 years of age or older
• Able to work in a climate controlled environment
• Has working knowledge of necessary equipment used in the kitchen
• Has working knowledge about health and safety regulations
• Has working knowledge of all cleaning equipment
• Able to work varied shifts, including weekends and holidays
• Able to effectively communicate in English, in both written and oral forms
